Festive Dish of Mashed Potatoes

Mashed potatoes are easy to make and delicious to eat. They are also packed with nutrients and are an excellent source of vitamins B6 and C. So if you're thinking of making an extra dish for your holiday dinner, surprise your guests with a creamy mashed potato dish mixed with red peppers and green onions. Your guests will devour it and will come back into your kitchen looking for more.

To make 8 to 10 servings of festive mashed potatoes follow our easy recipe. It should take you about 15 minutes to prepare and 25 minutes to cook your festive dish of mashed potatoes.

What You'll Need

  • 7 or 8 large potatoes, preferably Yukon Gold
  • 1 1/2 cups milk
  • 1/4 cup butter
  • 3 large garlic cloves, minced or 1/4 cup bottled chopped garlic
  • 1 teaspoon salt
  • 4 green onions
  • 4 roasted red pepper halves, bottled or home roasted
  • 1/2 cup regular sour cream

Peel potatoes and slice in half. Place potatoes in a large saucepan filled with water. Cover the pan and bring the water to boil. Then reduce the heat to medium. Let the potatoes cook for 20 to 25 minutes in gently boiling water. Potatoes should become fork-tender.

Prepare the milk-sauce in a large, microwave-safe measuring cup or bowl. Pour the milk into the cup and add butter, garlic and salt.

A few minutes before the potatoes are done, microwave the milk mixture on high until hot or heat in a sauce pan for 3 minutes. Cut the green onions into thin slices. If you're using bottled peppers, drain and pat the peppers dry with paper towels. Slice peppers into medium (2-cm) pieces.

Spill water from cooked potatoes. Return pan of potatoes onto the hot burner. Allow the excess liquid, if any, to evaporate by stirring. Turn off the burner before mashing the potatoes in the pan with a potato masher or a ricer. If you like you can use a large bowl to mash the potatoes.

Once mashed, add the hot milk mixture and stir. The potatoes should become creamy. Then, add sour cream, green onion and red peppers and stir. Taste and add salt, if more is needed. Now your festive creamy mashed potato dish is ready to be served.
