Bake Quick and Healthy Treats

Pineapple Upside-Down Biscuits
These biscuits are a healthy substitute for sugar cookies and leave a sweet tangy taste in your mouth. These cookies can brighten up those cold winter afternoons and provide you with an activity to do with your kids. To bake Pineapple Upside-Down Biscuits you'll need:
- 1 small can of crushed pineapple (undrained)
- 1/2 cup light brown sugar
- 1/4 cup (or 1/2 stick) butter, at room temperature
- 10 maraschino cherries
- 1 package refrigerated buttermilk biscuits (10 count)
Preheat the oven to 400 degrees F. Grease 10 cups of a muffin tray with vegetable oil or shortening.
In a bowl, add the stained crushed pineapple. Preserve the juice in the can for later. Combine the brown sugar and butter with the pineapple in the bowl. Mix well with a spatula.
Once thoroughly mix, separate the pineapple mixture evenly among the ten muffin cups. Put a cherry in the center of each cup, making sure the cherry touches the bottom of the cup.
Place 1 biscuit over the pineapple mixture in each cup. Sprinkle 1 teaspoon of the pineapple juice over each biscuit. Bake for 12 to 15 minutes or until the biscuits turn golden brown.
Allow the biscuits to cool for at least 2 minutes before inverting the tray onto a plate to release your warm Pineapple Upside-Down Biscuits. Serve warm.
Nutty Butter Balls
Nutty Butter Balls are a great substitute for rum balls and taste great even if you're not a peanut butter lover. The goodness of cornflakes mixed with walnuts and the sweetness of honey topped with peanut butter makes a deliciously nutty treat that appeals to all ages. To prepare your Nutty Butter Balls, you'll need:
- 1 cup peanut butter
- 1 cup honey
- 2 cups powdered milk
- 1 1/2 cups crushed cornflakes
- 1 1/2 cups finely chopped walnuts or pecans
- 1 cup powdered sugar
In a large bowl, combine peanut butter, honey, and milk. Mix into a thick mixture. Add the finely chopped nuts and roll the mixture into small balls about the size of a walnut.
Roll the balls in either the crushed cornflakes. Sprinkle on powdered sugar. Place on the nutty balls on waxed paper and refrigerate for 20 minutes. Serve cool.
