Mother’s Day Recipes: Egg Muffins

A different kind of muffin that’ll add a sophisticated touch to your Mother’s Day brunch.

 

  • ½ lb ground pork sausage
  • 1 small onion, chopped
  • 12 eggs, beaten
  • 1 tsp garlic powder
  • 4 oz chopped green chili peppers
  • salt and pepper to taste

1. Preheat oven to 350°F (175°C).

2. In a large, deep pan, cook the sausage over medium heat until evenly brown. Drain the fat and set aside.

3. Mix all the ingredients together in a bowl. Make sure they are thoroughly combined.

4. Using a lightly greased 12-cup muffin pan, spoon the mixture into the muffin cups, filling about half way. Bake for 15 to 20 minutes or until the egg has set and an inserted toothpick comes out clean.
