Summer Recipes: Creamy Potato Salad

Perfect for a weekend summer BBQ, whether at home or at the cottage, this deliciously creamy potato salad makes the perfect complement to any summer meal.


  • 1 lb. of red potatoes, unpeeled and cut into chunks
  • 1/4 cup of Italian-style dressing
  • 1/4 cup Miracle Whip Calorie Wise dressing
  • 1 to 1/2 tsp. of Dijon mustard
  • 1 hard-cooked egg, chopped
  • 1/2 cup sliced green onions


Cook potatos in boiling water for approximately 15 minutes or until tender. Drain. Rinse potatoes under cold water until cooled.

Mix dressings with mustard in a large mixing bowl. Add potatoes, onions and egg and mix lightly. Cover.

Let refrigerate for a minimum of 30 minutes. The salad can be refrigerated for up to 24 hours.
