Summer Recipes: Creamy Potato Salad
Perfect for a weekend summer BBQ, whether at home or at the cottage, this deliciously creamy potato salad makes the perfect complement to any summer meal.
Ingredients
- 1 lb. of red potatoes, unpeeled and cut into chunks
- 1/4 cup of Italian-style dressing
- 1/4 cup Miracle Whip Calorie Wise dressing
- 1 to 1/2 tsp. of Dijon mustard
- 1 hard-cooked egg, chopped
- 1/2 cup sliced green onions
Directions
Cook potatos in boiling water for approximately 15 minutes or until tender. Drain. Rinse potatoes under cold water until cooled.
Mix dressings with mustard in a large mixing bowl. Add potatoes, onions and egg and mix lightly. Cover.
Let refrigerate for a minimum of 30 minutes. The salad can be refrigerated for up to 24 hours.
