Mother’s Day Recipes: Chicken with Honey Mustard Marinade

Not your average chicken, the use of curry and apricot jam helps to bring flavor to life.

 

  • 1 whole chicken
  • 3 tbsp Dijon mustard
  • 1tsp paprika
  • ¼ cup honey
  • ¼ tsp ground black pepper
  • 2 tbsp apricot jam
  • ½ tsp curry powder

This chicken needs to be marinated for at least an hour. It is okay to prepare and leave overnight in the fridge.

1. Cut the chicken into 8 pieces and sprinkle with paprika, pepper and curry powder before placing the pieces into a roasting pan.

2. In a small bowl, mix the mustard, honey and apricot jam until blended and then pour over the chicken. Allow chicken to marinate for at least an hour.

3. Preheat oven to 350ºF (175ºC). Bake chicken for 1 hour, basting often. Serve immediately.
