Black Bean Burritos
Add a taste of Mexico to your Father’s Day dinner this year. Serve these burritos with some tortilla chips and salsa or guacamole on the side. Ole!
- 4 large flour tortillas
- 2 cans black beans
- 4 tbsp vegetable oil
- 2 tsp jalapeno peppers, minced
- 2 small onions, chopped
- 6 oz cream cheese, cubed
- 1 sweet bell pepper, chopped
- 1 tsp salt
- 2 tsp garlic, minced
- 4 tbsp fresh cilantro, chopped
1. In a large skillet, heat oil on medium heat. Add onion, pepper, garlic and jalapenos and cook for 2 minutes, stirring occasionally.
2. In the meantime, rinse and drain the black beans before adding them to the skillet. Cook mixture for another three minutes, stirring occasionally.
3. Add cubed cream cheese and salt to bean mixture and continue cooking, stirring occasionally, for another two minutes. Finally, stir in the cilantro.
4. Heat tortillas according to package directions. Spoon bean mixture onto a tortilla, fold tortilla and serve. You can also add cooked beef or chicken strips to the bean mixture. Just reduce the amount of beans you use.
