Mother's Day Recipes: Cheese and Tomato Casserole
These tomatoes have a taste resembling pizza, which should make the kids happy. Use a variety of cheeses and add onions for a different taste.
- 4 large tomatoes
- 2 sprigs parsley, chopped
- 1/8 cup Romano cheese, grated
- ½ tsp dried oregano
- ½ cup fresh bread crumbs
- 1tbsp olive oil
- 1 clove garlic, minced
- salt and pepper to taste
1. Preheat oven to 400ºF (200ºC).
2. Slice tomatoes to about ¼-inch thick. Place slices in a shallow baking dish that has been coated with cooking spray.
3. Sprinkle all the ingredients except the olive oil over the tomatoes. Drizzle the tomatoes with the olive oil.
4. Bake for 20 minutes or until cheese is lightly browned.
