Strawberry Rhubarb Crunch

Strawberries and rhubarb together give you just the right combination of sweetness and tartness that makes this dessert the perfect finish to any Easter meal.

  • 1 cup white sugar
  • 1½ cups plus 3 tbsp all purpose flour
  • 3 cups each, fresh strawberris, sliced, and rhubarb, diced
  • 1 cup packed brown sugar
  • 1 cup butter
  • 1 cup rolled oats

1. Preheat oven to 375°F.

2. Using a large mixing bowl, combine the white sugar, strawberries, rhubarb and 3tbsp of flour. Pour into a 9x13in baking dish.

3. In another bowl, combine the remaining flour with the brown sugar, butter and oats. Mix until it is crumbly and then crumble on top of the strawberry and rhubarb mixture in baking dish.

4. When oven is preheated, bake the crumble for 45 minutes or until the top is crisp and lightly browned.
