Sweet and Spicy Baked Ham

For a ham with a bit of a kick, this glaze is a great choice, especially if you’re serving a smoked ham. For this glaze, you will need:

 

  • ¾ cup brown sugar, packed
  • ¼ cup orange juice
  • 1/3 cup cider vinegar
  • 1 can each peaches and crushed pineapple, both in syrup
  • ¼ cup golden raisins
  • 1tbsp orange peel, grated
  • 1tbsp cornstarch
  • 1 clove garlic, crushed
  • ½tsp each read pepper flakes and fresh ginger, grated

1. Preheat oven to 325°F.

2. In a roasting pan, place ham on rack with the fat side up. Roast for 3 hours.

3. Meanwhile, drain and chop peaches. Set aside.

4. In a medium saucepan, combine peach syrup with brown sugar, vinegar and raisins. Over high heat, bring mixture to a boil. Turn heat down to low and allow sauce to simmer for 8 to 10 minutes.

5. In a separate bowl, mix the orange juice with the cornstarch before adding it to the simmering sauce.

6. Thoroughly mix the remaining ingredients into the sauce. Increase the heat to medium and stir constantly until it thickens and begins to boil. Remove from heat.

7. Take ham out of oven and brush ham with half of the glaze. Cook ham for another 30 minutes. If you have a meat thermometer, then take the ham out when the internal temperature reaches 160°F.

8. Brush ham with the remaining glaze and allow it to stand for about 20 minutes before serving.
